Honey has reached its peak flavor, aroma, clarity, and natural character when it is extracted from the hive. Up to that point, the bees have been responsible for creating and caring for an extraordinary food.
Once the honey is extracted, that responsibility shifts to the beekeeper.
From that moment forward, every decision—from extraction and straining to bottling, storage, shipping, and even the guidance we provide our customers—can help preserve or diminish the quality of the honey.
We believe our customers place their trust in us to protect the remarkable work of our bees. That's why we've taken the time to understand the science behind honey handling and why we try to make careful decisions throughout the entire process. Our goal is simple: to preserve the flavor, aroma, appearance, and natural character the bees created so that the honey you enjoy is as close as possible to the honey that came from the hive.
Extracted honey is best stored at a consistent room temperature, ideally around 70–75°F, in a tightly sealed container away from direct sunlight. A kitchen pantry or cupboard is usually the perfect place. Avoid storing honey near the stove, oven, or other heat-producing appliances, and avoid cupboards on outside walls, where temperatures can fluctuate more with the seasons.
Honey is hygroscopic, meaning it naturally absorbs moisture from the air. For that reason, always keep the lid tightly sealed and use only clean, dry utensils when serving honey. Introducing moisture can increase the risk of fermentation over time.
There's no need to refrigerate honey. Refrigeration and cooler storage temperatures encourage honey to crystallize more quickly. If you prefer your honey to remain liquid as long as possible, avoid storing it in cool locations such as the refrigerator, an unheated garage, or a chilly basement.
If your honey does crystallize, don't worry—it hasn't gone bad. Crystallization is a natural characteristic of raw honey and a sign that your honey has not been pasteurized. Simply place the jar in warm (not boiling) water and stir occasionally until the crystals dissolve. Avoid using high heat, as it can affect the natural flavor and beneficial properties of the honey.
We believe honey deserves to be stored in glass whenever possible. Glass is non-porous, doesn't absorb odors or flavors, and allows you to appreciate the natural beauty and color of the honey.
In our experience, glass also does the best job of preserving honey's flavor over time. We prefer glass because we believe it provides a better long-term storage environment than plastic, which may allow more exposure to air over extended periods. For us, it's simply the best way to protect the unique character of each harvest.
Glass is also reusable and recyclable, making it a more environmentally friendly choice. Many of our customers return their empty jars so they can be cleaned, sanitized, and reused whenever regulations allow.
We do offer some larger honey sizes in plastic for customers who prefer a lighter, more durable container, but whenever practical, you'll find our honey packaged in glass.
Honey is naturally acidic, with a pH of about 3.9, so the materials used to extract, store, and bottle it are important. Many common metals—including iron, steel, copper, aluminum, galvanized metal, and tin—can react with honey over time, affecting its flavor, color, and quality. Some metals may also corrode or rust when in contact with honey.
For that reason, we use food-grade stainless steel throughout our extraction and bottling process. Stainless steel is durable, non-reactive, and considered the industry standard for handling honey.
When plastic containers are requested, we use food-grade PETE (polyethylene terephthalate)Â bottles because they are one of the best choices for packaging honey. However, we bottle approximately 98% of our honey in glass, which we believe provides the best long-term protection for honey's natural flavor and quality.
Glass can also be gently warmed if the honey crystallizes - you shouldn't warm honey in plastic containers.
